The store is located in a residential area about a 5-minute walk from Omi Railway Mizuguchi Seongnam Station. The exterior looks like a private house with a tiled roof. The ink letter of the youthful taste written in a bold typeface is of interest to the banner hanging near the entrance.
The name of the store is “Yano Seimen”. Literally, the restaurant also operates while producing Chinese noodles and udon noodles. It is an old-fashioned popular cafeteria that has continued since 1954.
When you open the menu, you will find a variety of classic dishes like soba, udon, various set meals, bowls, and curries. Among them, “Suyaki” (normally 350 yen, large 450 yen, extra large 550 yen) has an unusual color.
Suyaki is a simple fried noodle fried in lard. Crispy Chinese noodles are fried until the surface becomes baked, giving it a savory and crispy texture. There is almost no taste, so each customer eats noodles with their favorite sauce and soy sauce.
According to Mr. Tanino, the previous store owner devised “cheap and tasty food” for the savory students, and as a result, Suyaki was born.

“I just want to feel the taste and texture of homemade noodles made with a vacuum mixer, so I only have spicy and green onions in the ingredients,” says shop owner Yoshiaki Tanino.
“Vacuum mixer” is a machine that mixes noodle ingredients such as flour and water in a vacuum. If you make noodles using this, the ingredients will blend well and you will be able to make noodles that are firm and sweet. In addition, “When you add a pinch of salt to the finish of cooking, the sweetness of the noodles stands out,” says Mr. Tanino, the secret of the deliciousness that makes it a habit.
As it was introduced as a local gourmet in the media, Suyaki’s name recognition is gradually spreading nationwide. However, Mr. Tanino said, “In fact, Suyaki took in the voices of regular customers, saying“ It will be even more delicious ”and settled down to the current taste and cooking method.
